On this occasion, we ran aprivate three day ramen and udon course in our HQ.
The client had come all the way from Canada to learn how to make quality ramen and udon noodles. This time, we tried making noodles with flour from Canada. Generally speaking, most overseas flours are not produced for the purpose of making Japanese noodles, so many of our students and clients have difficulty finding the right local flour for making authentic Japanese noodles.
However, we have lots of experience and techniques for turning most kinds of flour into quality noodles. With our support, he was able to make quality udon and ramen noodles with his local flour. We’re glad to see his smiling face, which tells that he’s satisfied with the noodles he made with us.
